Simple Greek salad recipeServes 4
Ingredients:2 large cucumbers, peeled and seeded6 large black olives, chopped2 large green bell peppers, seeded and diced1 large red bell pepper, seeded and diced1 small red onion, cut into 1-inch pieces1 large tomato, diced1/2 cup olive oil1-1/2 teaspoons white wine vinegar1/2 cup crumbled feta cheeseSalt and pepper to tasteDirections:- Combine all the vegetables in a large bowl.In a small bowl, whisk together the vinegar and oil, salt and pepper and toss it with the vegetables.Add the feta cheese and toss again to coat well before serving.
